Rishav Dalui grew up in Kolkata, studied biotechnology in Chennai, then moved to Vancouver for two postgraduate degrees — supply chain management and international business management. That was supposed to be the plan. Then food got in the way.

For seven years, he worked as a chef across Canada — corporate kitchens first, then some of the country's finest dining rooms, learning under mentors who shaped the way he saw food entirely. It was there, on dessert service, that he first worked with freeze-dried raspberries — watching a preservation technique built for astronauts and emergency rations turn into the best bite of a guest's evening. That was the moment the idea took root.

He came home with a question he couldn't shake: if the world's best kitchens were reaching for freeze-dried ingredients, why wasn't anyone building that supply chain from India — a country already growing some of the most sought-after produce on earth? CryoNature is the answer.

The product philosophy followed the same logic. Rather than compete in commodity fruits and vegetables — categories every exporter already fights over on price — CryoNature leans into functional, nutrient-dense ingredients: moringa, turmeric, amla, the ones India already does better than almost anywhere else. It's the sharper business decision, and it's also the one that matters more: getting ingredients that genuinely support people's health out of Indian soil and into the hands of the industries — and eventually the people — who need what they actually do, not just what they taste like.

He didn't build it alone. His father, Prodip Kumar Dalui, spent over four decades in manufacturing — running a family business that made industrial water valves — before moving into consulting for manufacturing companies, including some of India's leading foundries. When his son decided to build CryoNature, he didn't just offer advice. He became a partner, bringing decades of operational discipline to match his son's ambition.

CryoNature is what happens when a lifelong dreamer and a lifelong builder decide to bet on the same idea — together.
